February is the month for lovers! And on Valentine’s Day, serve up lots of love with this succulent meatloaf – guaranteed to melt anyone’s heart! Delicious when served with red potatoes mashed with sour cream and fresh chives, and some acorn or butternut squash – cut in half, steam until tender, dab with butter and nutmeg. Set the tone for a romantic soiree by topping the table with red and white flowers, candles, and a bottle of red wine (good for your heart and your health!). Add a little soft music for mood, Godiva chocolates for dessert, and your celebration will be a dreamy night to remember.
Ingredients:
1 pound extra lean ground beef
6 slices whole wheat bread
1 egg white
1/3 cup celery, finely chopped
1/3 carrots, finely chopped
1/3 onion, finely chopped
1 teaspoon parsley
1/2 teaspoon poultry seasoning
1/2 teaspoon garlic powder
1 tablespoon Worcestershire sauce
pinch of thyme
pinch of basil
pinch of white pepper
salt & pepper
Directions:
Saute celery, carrots and onions in 2 tablespoons of olive oil until they are tender, then remove from heat and set aside. Dip bread slices in water to moisten (squeeze out any excess) and set aside. Combine ingredients together in a bowl and mix well – use your hands if you like. Cover a 9x12 inch cookie sheet with aluminum foil, transfer mixture onto it, and mold into the shape of a heart. Bake at 350 degrees for 20-30 minutes. Serves 4.
